Our Story

Established in 2018, Rollin' Tokyo is the vision of owner and head chef Arthur Mills— a refined exploration of seasonal Japanese cuisine, set within a serene, minimalist space in the heart of Surry Hills, Sydney.

Arthur, together with Rollin' Tokyo Chef, Ayaka Sato, crafts a menu that celebrates traditional Japanese ingredients, using only the finest locally sourced Australian produce, alongside specialty items imported directly from Japan.

While rooted in Japanese culinary tradition, our approach is not bound by convention. We draw inspiration from global techniques to reinterpret classic Japanese dishes, offering a contemporary take on a cuisine that continues to evolve.

Our menu shifts frequently to reflect the freshest ingredients available, guided by what our dedicated network of small growers and producers bring in each day. Quality, not quantity, shapes each dish.

At Rollin' Tokyo, our goal is simple: to create flavour-led, elegant dishes prepared with precision and restraint. Our multi-course experience is designed to showcase the essence of Japanese dining, with an optional pairing menu curated by our in-house sake and wine sommelier, Erika Watanabe.
